Did You Make Mama Proud at Mother’s Day Dose?
You literally owe the woman your life. So if you took her to Dose on Sunday, you did your due diligence (and if you didn’t, well…).
She’s big on life lessons. At Dose, you learned a thing or two:
Drinking Virtue Cider impairs judgment. (So please drink responsibly – and find yourself a designated driver, for goodness’ sake!)

Don’t go into sugar shock. (Do-Rite Donuts are hard to resist.)

And always, always send a Mother’s Day card (preferably from A Muse).

Koval Distillery at Dose Market
Why do we love Koval Distillery? So many reasons. They’re Chicago’s first (and only) organic distillery. They’re a husband and wife team working from a small warehouse in Ravenswood–which you can tour each Wednesday, Saturday and Sunday. They make single-grain white whiskeys (from millet, oat, spelt and other Midwest-sourced grains) and beautiful liqueurs in flavors like rose hip, orange blossom and chrysanthemum-honey. They age their whiskeys, too, in two types of American oak barrels from Minnesota.
If you stopped by the market this past Sunday and tried the (complimentary!) cocktail they served throughout the day, you likely share our love. It was a gorgeous spring libation of Koval’s Midwest Wheat spirit, Asian Pear liqueur, lime juice, soda water and brand-spanking-new tart-cherry grenadine from Madison’s Quince & Apple.

Hound spring/summer debuts at Dose
Not to get too punny here, but we’ve been hounding Jen Beeman to bring her line, Hound, to Dose pretty much since we started. Fortunately, the stars aligned this month and she’s making a grand entrance with the debut of her spring/summer 2012 collection. We’re stoked, and you will be, too, after taking a look at a few pages from her ridiculously fun look book. It’s no surprise the Chicago-based designer has a BFA in photography; the images are as striking and dynamic as the collection. Have fun and give her a warm Dose welcome this Sunday! Bag is Beautiful

Born in 2010, WORKSHOP/CoOp was conceived when Leslie Thomas met the women of Trama Textiles, an artisan-owned female-led cooperative practicing the ancient art of backstrap loom weaving.
Delighting in their colorful craft, Leslie created a few bags she thought essential to her own life. The experience inspired her to set up a new business, WORKSHOP/CoOp, designed to help women by ensuring fair working conditions and higher-than-typical wages for the makers of her bags. Prices range from $45 to $95, and built into the cost of each bag is a donation to a woman or girl in need. Purchasing the smallest bag equals a six-month supply of hygiene products for refugee women and girls. The big bags? Purchase one and you’ll be covering the cost of a kitchen kit for a family. Meet Chuey, an artisan at Lisa Kingsley’s workshop in Leon, Mexico, crafting one of her French linen clutches.
Lisa sources her French linen from vintage Paris stock and her signature exotic leathers from a company that owns and operates farms around the world, where animals are bred in their indigenous environments and live out their full life spans. For every egg that’s incubated and eventually used for leather and meat, the farms with which Lisa works releases three eggs into the wild. Translation: Environmentally-conscious, animal-loving ladies can feel better about leather carrying a Kingsley bag.

The third entry in our handbag lineup, new Chicago company GAIA will showcase the Susanna Valerio line of minaudieres and accessories. This Italian mother/daughter creative team was contemplating their latest travels while chatting over a glass of wine at their luxury handbag factory. They discussed the necessity of adding a chic, eco-friendly bag option to their production schedule. Using collected shells disposed of by local resturants and beautiful already-used woods, they breathe new life into their materials with fabulous little catch-all clutches for parties and brunch outings.

Pecking Order Chicken Debuts at Dose
When we first met chef Kristine Subido at Wave, way back in 2006, we asked her for her favorite Filipino spots in town–and there weren’t very many. So we’ve been waiting, patiently, for the day that Subido changed that.
That day is May 13 (!), when she debuts her new Filipino chicken restaurant, Pecking Order, at Dose. If all goes as planned, the counter-service spot will open later this month. But you can get a first taste at Sunday’s market.

Come hungry for:
- savory-sweet chicken marinated in tamari, cane vinegar, garlic and sugar
- achara, traditional Filipino pickled mango jicama, chayote and carrot
- pan de sal bread (Subido’s mother’s recipe is being produced by West Town’s La Farine Bakery)
- halo-halo, that multi-hued, icy dessert, here made with fresh coconut, local fruit preserves and Subido’s mother’s coconut-caramel cream (think cajeta, but made with coconut milk)

Chew on Something New at Dose May 13
One of the best parts of Dose? The fact that it’s ever-changing. This month is no exception, welcoming a slew of new vendors. Here are a few highlights:
Valentino Pasta
Pasta is a crowd-pleaser — especially when it’s small-batch, organic, and made in the suburbs of Chicago. Valentino uses semolina, whole wheat, and spelt flours to create delicious dry pasta. It’s toothsome, holds sauce in every imperfect crevice, and tastes even better when seasoned with Valentino’s artisan sea salts.
Sheekar Delights
Baklava craving? Sate it with Sheekar Delights. Diane Khouri Joseph bakes delectably moist sweets using her mother’s recipe. She hand-butters phyllo sheets, rolls them with chopped nuts (walnut or pistachio), adds homemade syrup, and voila: delightful Middle Eastern goodness.
Quince + Apple syrups
You know them for their addictive seasonal preserves in flavors like tart cherry-white tea and shallot confit-red wine. On May 13, Q+A debuts their new line of syrups, starting with tart cherry grenadine. Sample them in complimentary cocktails made with Koval liquor, and pick up gorgeously packaged bottles to use at home.
Grown Up Kid Stuff
The secret to Grown Up Kid Stuff’s deliciousness is in the ingredients: a blend of two Ghanian cocoas (from a company that promotes sustainable farming practices and development of farmer cooperatives), molasses, and cane sugar. Lactose-intolerants and vegans, rejoice! In addition to chocolate, caramel, and Grand Marnier, GUKS introduces brand new dairy-free sauce on Sunday.
Jeni’s Ice Creams
We’ve been wooing this Columbus churner for months, and are thrilled to welcome them this Sunday. They’ll be scooping Ugandan vanilla bean, salty caramel, dark chocolate, and goat cheese with roasted red cherries for anyone craving a cool snack.

Do It Rite: Do-Rite Donuts
The first thing to know about Do-Rite Donuts: It’s aptly named. Owners Francis Brennan and Jeff Mahin have quite the history with dough–Brennan working with François Payard and running the bread program at L20, Mahin owning a pizza restaurant–and with their tiny new Downtown doughnut shop they are, indeed, doing it right.
Fried-dough fans have been flocking to the shop for some of the city’s most creative versions of the form. We’re smitten with the coconut custard, filled with coconut-milk cream and topped with a heavy shower of toasted, unsweetened coconut. It’s a sophisticated as the jelly doughnut and Boston cream pie are classic. And oh, that Old Fashioned…she’s a crisp-crusted, sugary glazed beaut. The gents do a mean gluten-free doughnut, too.
Want to know the best part? They’ll be setting up shop at Dose on Sunday, May 13. Usually closed on Sundays, Do-Rite will be bringing the bacon (candied-maple-bacon doughnuts, that is) to River East. Its drinkable partners in crime, Dark Matter Coffee, will be there, too, slinging some of the best espresso in town.
